Quick Vegetable Recipes-Spaghetti Squash

Spaghetti squash can be cooked and used as it comes out or it can be added to other ingredients. If you are in a hurry and need a quick dinner that is still healthy, try one of these.

Cut the spaghetti squash in half. Place it, cut side down, on a paper towel in the microwave. Cook it. The length of time will depend on the size of the squash, but it takes about ten minutes. When the insides of the squash are softened, loosen them from the edges of the squash and add butter with a little honey. Mix it. Scrape it from the skin onto a plate and it is ready to eat.

Another option for this same squash is to clean out both sides of the squash into an oven-proof pan. Add a jar of spaghetti sauce, such as Ragu. You can also add freshly cut vegetables like carrots and celery. While you set the table and get ready to eat, place it in the oven on 350 degrees until the sauce has warmed. Serve with salad.

To make the previous meal a little spicier, add medium salsa to the mixture. You can add it before you bake it. Personally, I like to add mine afterward. You can also vary it by melting cheese on the top just before you remove it from the oven.
