Easy, Healthy Breakfast

Diet experts will tell you that skipping breakfast will cause detrimental actions in your diet. It is important to eat every meal. But, if you have kids or a commute, it becomes more than a chore. This recipe doesn’t take long and you can prepare some of it the night before. While it is vegetarian, it is not vegan.

Ingredients

Three egg whites
One-half cup fresh baby spinach leaves
One-fourth cup salsa
One-fourth cup sliced avocado
One tablespoon cheese
One multi-grain pita

Scramble the three egg whites. While they are scrambling, heat and cut your pita. When the eggs are finished cooking, spoon the eggs and cheese into the pita. Add the spinach leaves, then the avocado. Pour on the salsa and sprinkle on the cheese. Grab a paper towel and you are ready to head out of the door!

*The night before, wash the baby spinach leaves. You can also measure out the cheese and the salsa. That leaves only the eggs, the pita and the avocado to fix in the morning.
