Shepherd’s Pie

There are many recipes for Shepherd’s Pie. I am sure that all of them are delicious. While Shepherd’s Pie is not a pie, nor does it contain a shepherd, this particular recipe does not even include meat! To feed the vegetarian in your house, as well as the rest of the family, try this recipe for four.

Ingredients

Eight ounces of lentils that have been soaked overnight
One pound mashed potatoes
Two cups of vegetable stock
Two sliced onions
Two ounces of margarine
One and one-half ounces of flour
One teaspoon mixed dried herbs
One bay leaf
Salt and pepper to taste

Drain the water off of the lentils. Cook them in one and one-half cups of the vegetable stock seasoned by the bay leaf. In about twenty to thirty minutes, the lentils should be tender. Drains them and season them with salt.

Heat the margarine in a frying pan and add the onions slices. Cook until they are golden browned. Stir in the flour and the rest of the vegetable stock (one-half cup). Stir the flour in the stock until their are no lumps.

Mix in the lentils and the herbs. Add salt and pepper to taste.

Put everything in the bottom of a casserole dish and cover it with the mashed potatoes.

Bake at 350 degrees for one hour.
