Vegetarian in a Crockpot - a casserole recipe

Crock pots can be the working woman’s best friend, but if you are a SAHM, this idea will be great for you too. Put the crock pot on in the morning and forget it. Supper will be ready when you need it!

Summer Squash Casserole

Ingredients
6 Cups of summer squash, zucchini or a combination of the two
1/2 medium onion
1 cup carrots, shredded
1 cup sour cream
1/4 cup flour
8 ounce package of seasoned stuffing
1/2 cup margarine
1 can condensed cream of mushroom soup

Combine the squash, onion, carrot and mushroom soup; set aside.
Mix sour cream with the flour and add it to the vegetables. Mix.
Combine the stuffing and crumbs.
Place half of the stuffing mixture in the bottom of the crock pot. On top of the stuffing, add all of the vegetable mixture. Top it off with the rest of the stuffing.
Cover the crock pot and cook on low for six to eight hours.
(This recipe will serve about eight people.)
